835. Not sure why I don't cook scallops more often – they're quick, simple and it seems like Trader Joe's always has decently priced, fresh ones in stock lately. For years, I've heard rave reviews for Ina's Scallops Provençal but waited until now to try them … and they lived up to the hype!!! These melt-in-your-mouth treats were seared, then bathed in butter, shallot, garlic + parsley before finishing with some white wine. A squeeze of fresh lemon juice before serving brightens the dish. Following Ina's recommendation, we served this with her herbed basmati rice to soak up all the remaining sauce!
